The illy Arabica Selection coffee beans each come from a single origin. This one is Brazil: 100% Arabica from the Cerrado Mineiro region, roasted by illy and packed as whole beans, so you grind them fresh for every brew.

Flavour

illy describes the flavour as balanced between acidity and bitterness, with notes of caramel and dried fruit. The caramel is the note you notice first, and milk brings it forward even more, which makes this a lovely bean for a latte or cappuccino. On our strength scale it sits at 8 out of 13, and illy gives it intensity 5/9 on its own scale: a cup with real body, where the acidity keeps it lively rather than heavy.

Regenerative farming

This is illy's first coffee to be 100% regenagri® certified. In Cerrado Mineiro, illy selects only certified regenagri® crops for it. Regenerative agriculture, as illy describes it, combines tradition and innovation to restore biodiversity, soil fertility and natural cycles, treating the fields as complex, interconnected ecosystems.

Brewing

illy recommends it for the moka pot and filter coffee, and it also works as an espresso or as the base for milk drinks. As these are whole beans, you will need a grinder at home, set to suit the method you brew with.
