illy Decaffeinato is illy's classic 100% Arabica blend with the caffeine taken out: the same medium roast and the same balance, ground for the espresso machine. It is the one to reach for when you want an espresso or a cappuccino after dinner without the caffeine.

Flavour

Smooth and balanced, with notes of caramel, chocolate and toasted bread and a sweet finish. It sits at 7 out of 13 on our strength scale and at illy intensity 5/9.

How the caffeine comes out

illy decaffeinates with the CO2 method. The caffeine is drawn out of the green beans with water and carbon dioxide alone, without chemical solvents, a gentle process that leaves most of the aroma in the bean. What remains is no more than 0.1% caffeine.

Brewing

The grind is made for espresso machines that take ground, tamped coffee. illy recommends 7 grams per shot with a firm tamp for an espresso with a full crema. Drink it short, run it longer as a lungo, or top it with steamed milk for a cappuccino or latte.

The tin

illy packs the coffee in a pressurised tin: the oxygen is removed and replaced with nitrogen, which protects the grounds from air and moisture until you open it.
