Back in the early 1500s, the Spaniards landed in Mexico where they encountered the Aztecs and cocoa. Cocoa was so precious to the Aztecs that they even used it as money. The cocoa from the province of Chiapas was the first that the Spaniards brought back to Europe. These days, Chiapas and Tabasco are still the main cocoa-producing provinces in Mexico, making up 99% of the country’s total cocoa yield. Of that production, while Tabasco contributes 18,000 tons and Chiapas 4,500 tons, only about 100 tons are exported each year.
