What Dolce was like

It was the mild end of the shelf. Careful, thorough roasting gave it a notably smooth cup — soft and rounded rather than sharp — and behind that sat fresh, green notes with the sweet aroma of sun-dried apricots and roasted peanuts. At 6 out of 13 on the Café du Jour scale it was a genuinely gentle coffee, closer to the middle of the range than to a dark espresso roast.

Choosing a replacement

If what you liked about Dolce was the softness and that sweet, fruity-nutty aroma, look for a bean in the same mild range rather than one of the heavier Italian espresso blends, which will taste noticeably more roasted in the cup. Dolce came as a 1 kg bag of whole beans, so a like-for-like swap means beans rather than ground coffee.
