Organic white tea with cranberry

Tea of Life blends white tea with cranberry and packs it as 25 individually wrapped tea bags. White tea is the least processed leaf the tea plant gives: young leaves and buds picked early, then withered and dried, with no rolling or oxidation to darken them. That is why the brew comes out pale straw rather than amber and why the flavour is so light. The cranberry works with that rather than against it, adding a clean, tart fruit note without turning the cup sweet.

Brewing it

White tea does not want water straight off the boil. Let the kettle stand for a minute or two, pour at around 80°C and give the bag two to three minutes. Boiling water scalds the delicate leaf and draws out tannin, and the cup turns sharp and loses the softness you bought it for. Lift the bag out when the time is up and drink it as it is; it takes no milk.

Keeping it fresh

Each bag sits in its own sealed sachet. White tea is dried rather than fired, so it holds on to aroma the way a dried flower does and loses it just as easily once air gets at it; sealed one by one, the twenty-fifth bag brews like the first and a couple can travel in a bag without going flat.
