What are raspberries in dark chocolate?

These are freeze-dried raspberries with a layer of dark chocolate around them, in a 250 gram pack. You first taste the rich, slightly bitter dark chocolate and then the fresh, fruity note of the raspberry.

The combination is reminiscent of chocolate fondue with fresh fruit, but as a crunchy snack that you eat straight from the bag.

Why are the raspberries in dark chocolate freeze-dried and not fresh?

During freeze-drying the moisture is removed from the fruit while flavour and colour are preserved. This makes the raspberry crunchy instead of juicy and gives it a more concentrated taste.

How do I best store raspberries in dark chocolate?

Store the pack in a cool, dry and dark place and tightly closed, ideally at around 15 to 18 degrees. Do not put chocolate in the fridge: the moisture and the temperature difference make chocolate bloom, leaving a greyish white haze on the outside.

Close the bag properly after opening. Freeze-dried fruit attracts moisture and therefore loses its crunchy bite.
