Roasting does not stop when the drum does. The beans are still hot and go on cooking each other until that heat is pulled away, which is what this coffee bean cooler is for. A high-volume motor at 3000 rpm draws air through a batch of up to 500 g and takes it down to room temperature fast enough to fix the roast where you wanted it.
Why a roast has to be cooled
Take beans out of a roaster and they carry on developing. They hold a lot of heat, they radiate it into each other, and the roast you carefully aimed at drifts past the point you wanted. Getting them down to room temperature quickly is what stops that drift. From there the beans want three to four days to rest and degas before the flavour settles and they are worth grinding.
How this one works
A high-air-volume motor running at 3000 rpm pulls air up through the bed of beans instead of simply blowing over the top of it, so the heat leaves from the middle of the batch as well as the edges. The chamber holds 500 g at most; for the quickest cooling the maker suggests loading 400 g, which keeps the bed shallow enough for air to move freely through it. Two meshes are supplied, a coarse steel one and a fine one, so you can match the screen to the bean size and keep the chaff where it belongs.
The housing is built to keep the fan noise down, which matters for a machine that spends its working life at full speed on a kitchen worktop. It pairs with a home roaster such as the Gene Café CBR 101.
