Blanxart - Filipinas Isla de Mindanao - 87% dark chocolate

- 1 piece4.50
An 87% dark bar from Blanxart, made with Trinitario cocoa grown on Mindanao in the Philippines. At that cocoa percentage there is very little sugar left, which usually means a dry, austere bar; this one leans fruity instead, with cherry, fig and sultana up front and quieter woody and nutty notes behind. Vegan and gluten-free.
Blanxart makes this bar at 87% cocoa from Trinitario beans grown on Mindanao, in the southern Philippines. At that percentage there is very little in the bar besides cocoa, so what you taste is the bean rather than the sugar.
How it tastes
Fruity first: cherries, figs and sultanas, the sort of dried-fruit sweetness that comes out of the cocoa itself. Woody and nutty notes sit underneath. Trinitario is a hybrid of Criollo and Forastero, grown for aroma as much as for yield, and that shows here — the bar is intense without being harsh, which is why it tempts people who normally stop at milk chocolate.
Cocoa in the Philippines
Cocoa is not new to the islands. It has been grown there since the 17th century, when the Spanish explorer Pedro Bravo de Lagunas planted the first cocoa tree at San José in Batangas. The beans for this bar come from Mindanao, the large island in the south.
