The temperature you set, held where you set it

Water straight off the boil is hotter than most coffee wants, and how far off the boil it is changes what ends up in the cup. This Hario V60 kettle lets you choose anything from 50 to 96 °C and then holds it for 15 minutes. That steadiness is the point: the last pour of a brew is at the same temperature as the first, and tomorrow's brew matches today's.

Two modes do the work. One heats the water to the temperature you have set; the other keeps it there. The settings are colour-coded, so a glance at the kettle tells you which one it is in.

Why the gooseneck

The spout is long, narrow and curved. That turns the kettle into something you aim rather than tip: water leaves in a thin, even stream that you can place exactly where you want it on the coffee bed, and speed up or slow down as the brew goes on. With a wide household spout the water arrives all at once and wherever it lands, which is no use for a pour-over.

If you walk away

The kettle cuts its own power after 10 minutes without use, and boil-dry protection stops it heating if there is no water in it.
