Green Gunpowder is a green tea whose leaves are hand-rolled into small, tight pellets — the name comes from how much they look like grains of old gunpowder. In hot water the pellets slowly unfurl into large, open leaves and let go of their scent all at once. The cup is highly aromatic and gently robust, with green tea as the only ingredient. A 100 g pack gives around 40 to 50 cups.
Gunpowder green tea is named for its shape. The leaves are hand-rolled into small, tight pellets that look like grains of old gunpowder; pour hot water over them and they slowly unfurl, opening back out into whole leaves in the pot.
Why the pellets matter
Rolling compresses the leaf and keeps the aroma shut inside until you brew. When the pellets open they release it in one go, which is why the scent is the first thing you notice. Once open, the leaf is large and loose, so water moves freely around it and draws out a rounded flavour instead of a flat one.
In the cup
This Café du Jour gunpowder green tea is highly aromatic and gently robust: more backbone than a delicate green tea, without tipping into harshness. The only ingredient is green tea, with nothing added.
Brewing
As a loose-leaf tea you will want an infuser, a strainer or a teapot with a built-in filter. Heat the water to around 75–80°C — green tea does not want a rolling boil — use about a teaspoon of pellets per cup and steep for two to three minutes. The same leaves will take another one or two infusions after that, and at this dose a 100 g pack comes to roughly 40 to 50 cups. A slice of lemon or a little ginger sits well with it.
