The Hario Mizudashi is a 1000 ml glass jug for making cold brew coffee at home: 80 g of coarsely ground coffee into the permanent filter, 1150 ml of cold water poured slowly over it, then 8 to 12 hours in the fridge. No heat and no paper filters. The glass takes both heat and cold, and the same filter works for loose-leaf tea. This is the brown version.
Cold brew without a machine
Mizudashi is Hario’s cold brew jug: a 1000 ml glass carafe from the Japanese glassware maker, with a lid and a tall permanent filter that hangs down the middle. The coffee is brewed with cold water and time instead of heat, which is what makes cold brew taste rounder and less sharp than hot coffee that has been left to go cold.
Making a jug
For a full 1000 ml of cold brew, measure 80 g of coffee into the filter — ground coarse, as you would for a cafetière — and pour 1150 ml of cold water over it slowly, in a circular motion, so every bit of the grounds is wetted. Put the lid on, give the pot a gentle shake and leave it in the fridge for 8 to 12 hours. Lift the filter out when the time is up and it is ready to pour, over ice or with a dash of milk.
The pot itself
The glass is made to handle both heat and cold, so it goes from a hot wash straight back into the fridge. The filter is permanent: a fine mesh you rinse and reuse, with no papers to buy and nothing to throw away but the grounds. It works just as well with loose-leaf tea, so the same jug does cold-brewed tea through the summer.
