This matcha set holds the four tools that matter: a porcelain bowl, a bamboo whisk, a bamboo scoop and a holder for the whisk, all finished in the white-and-blue Aurora pattern and made in Japan. It comes in a cardboard gift box, so it can go straight to someone else or straight onto your own shelf.

How the pieces work together

Matcha is not steeped, it is suspended: the leaf is ground to a powder and whisked into the water, so nothing is left behind in a strainer. The scoop lifts the powder out of the tin. The bowl is wide and shallow - 13 cm across, 7 cm deep - which gives the whisk room to move and the froth somewhere to build. The whisk itself is cut from a single piece of bamboo into dozens of fine tines; work it briskly back and forth in a W rather than stirring in circles. Use water just off the boil, around 80°C, as boiling water makes matcha taste harsh.

Why the holder is in the box

A bamboo whisk dries out of shape if you leave it lying on the worktop. Sat over the holder, the tines keep their curve while it dries, which is what keeps a whisk usable. Rinse it in warm water, no washing-up liquid, and put it back on the stand.

Building on it
