What is in Passionnel
Passionnel is a floral green tea blended by Café du Jour: green tea leaf with rose, mistletoe, goji berries and natural flavouring. The name comes from a line by Joseph Joubert, 'Tenderness is the tranquillity of passion', and the blend is mixed and packed at our own tea packing house in Maasland, in the Netherlands.
What it tastes like
The rose is the first thing you meet, more in the scent than on the tongue. Behind it the goji berries bring a quiet sweetness and the mistletoe a soft herbal note, both sitting on the light, fresh base of the green tea. Aromatic without being heavy, and it needs neither sugar nor milk.
Brewing it
Green tea does not want boiling water. Pour at around 75 to 80°C, or let the kettle stand a couple of minutes after it clicks off. One teaspoon of loose-leaf tea per cup in a strainer, infuser or teapot with a built-in filter, two to three minutes in the water, then lift the leaves out. The same leaves will give a second, lighter infusion.
