Named after the cocktail

Pineapple and coconut are the two flavours that make a Piña Colada, and this blend puts both of them on a rooibos base as real pieces of fruit: pineapple for the fresh, tart side and coconut for the soft, creamy finish. It drinks sweet and creamy rather than sharp. No alcohol, and nothing in it to keep you awake either, which makes it easy to hand round late in the evening.

Why rooibos underneath

Rooibos is not a tea leaf but a South African shrub, and it does two useful things in a fruit blend. It carries no caffeine, and on its own it is mild and faintly sweet, so it supports the pineapple and coconut instead of competing with them. Strictly speaking, then, this is a herbal infusion with fruit through it rather than a tea.

Hot in a pot, cold in the fridge

Hot: 2 to 3 g of loose tea in an infuser or a teapot, water at about 95 °C, five to seven minutes. Cold: 4 g in a jug or a bottle, topped up with cold water and left in the fridge for at least six hours, then strained and poured over ice. The cold version is the one to make in summer, because the coconut comes through more clearly when the tea is chilled.
