What the thicker paper does

Chemex bonded paper is 20 to 30 per cent thicker than an ordinary cone filter, and that is the whole point of it. A denser bed slows the drawdown and holds back the fine particles and much of the oil, which is why a Chemex brew comes out as clear in the cup as it does. The extra weight also helps the filter stand up against the glass instead of folding in on itself when the first pour goes in.

Pre-folded, so setup is quick

These arrive as folded squares. Open one out into a cone, seat it in the brewer with the three-layer side against the pouring spout, and you are ready to pour. There is no folding, trimming or second-guessing at half six in the morning.

Which brewers they fit

The FS-100 is cut for the classic wooden-collar Chemex in the six-cup and eight-cup sizes, the CM-6C and the CM-8C. The same folded square also suits most other cone brewers, as long as the shape of the cone lines up, so it is worth holding one against your dripper before you commit to a whole pack.
