The Chemex® Classic is a manual brewer: no power, no pods, nothing to go wrong. Ground coffee sits in a paper filter in the neck, hot water goes over it in stages, and the coffee gathers in the glass below. This is the three-cup model, the smallest in the Classic series and the one that makes sense if you are brewing for yourself or for two.

Why borosilicate glass

Borosilicate is non-porous, and that is the practical point of it. It absorbs no odours and holds no chemical residue, so yesterday's dark roast leaves nothing behind in this morning's filter coffee. It also copes with heat: brew a full pot, cover it, let it go cold and reheat it, and the flavour survives the round trip.

Filters

The Chemex is designed around CHEMEX® Bonded filters, and this size takes the Unfolded Half Moon papers, FP-2 or FP-2N. They are not included, so put a box in the basket with the brewer if you do not already have one. Bonded filters are noticeably heavier than ordinary filter papers and hold back the oils and fines, which is where the clean, light-bodied character of Chemex coffee comes from — no sediment in the last mouthful.
