What a custard flip is

Custard flip is a classic Dutch dessert, and this black tea is named after it. The cup comes out creamy and sweet, with subtle notes of vanilla and berries over a smooth black tea base. It reads as an odd idea and drinks as a comfortable one: recognisably tea, with a pudding-like edge to it.

There is no dairy in it

Despite the name and the taste, the blend contains no yoghurt, no custard and no milk of any kind. The creaminess comes from natural aromas, which makes this one drinkable if you are avoiding dairy. It is black tea, so it does contain caffeine. For a dessert-ish cup at bedtime, look at the caffeine-free herbal teas; for a lighter afternoon cup, the green teas.

Brewing

One teaspoon, about 2 g, per cup — or 2 to 3 g per 200 ml if you would rather weigh it — with water at around 95°C and three to four minutes of steeping. Use it as loose tea in an infuser or a pot with a filter. For the full custard flip effect, finish the cup with a dash of milk or a little vanilla syrup.
