A plain green tea from South India
Sunleaf green tea is grown in the tea-growing regions of South India and comes in a box of 25 tea bags. There is nothing blended into it: no jasmine, no mint, no fruit. The cup is pale, mild and fresh, the sort of tea you can keep drinking through the day without it becoming heavy.
How to brew it
Green tea does not want boiling water. Pour at around 80°C, a minute or so after the kettle has boiled, and give the bag two to three minutes before you take it out. Water straight off the boil, or a bag left sitting in the cup, pulls out tannins and makes the tea sharp and astringent. If your green tea has come out bitter before, that is usually the reason. Drink it as it is, or with a slice of lemon; it does not take milk well.
Why the bags are wrapped separately
Each of the 25 bags is sealed in its own sachet. Green tea loses its fresh aroma faster than black tea once it is exposed to air, so the wrapping earns its place here: the last bag in the box brews much like the first.
