These are green, unroasted Robusta beans from India, supplied in a 1 kg bag for roasting at home. Cherry is the Indian grade for dry-processed robusta, and AA screen 18 means large beans of around 7.1 mm, sorted to one size so they take the heat evenly in a drum. Nothing has been done to them yet: the roast profile, and the cup that comes out of it, is yours to set.

Green beans, not roasted

This is raw Robusta from India — hard, pale green unroasted coffee beans that have to go through a roaster before they are coffee at all. Café du Jour supplies them in a 1 kg bag, which is enough for a run of test batches rather than one careful attempt.

What the grade tells you

Indian coffee is graded by how it was processed and by how big the beans are. Cherry means the beans were dried in the fruit rather than washed, the dry method. AA screen 18 is the large end of the sizing: the beans measure about 7.1 mm and have been sorted so they are all near enough the same size. That matters in a drum, because evenly sized beans reach first crack together instead of leaving you with scorched smalls next to underdone larges.

Roasting it

Work in small batches at first and keep notes, so you can repeat a profile you liked. Robusta behaves differently from arabica: more caffeine, heavier body, less acidity, and it is the species that puts a thick crema on an espresso blend. On its own it roasts into a blunt, forceful cup, which is why most roasters use it as a percentage of a blend and set that percentage by taste.
