White tea with cornflower
L'essence is a white tea with cornflower petals and nothing further. White tea is the least handled of the tea leaf: picked young, then simply withered and dried instead of rolled and fired, which is why the cup comes out pale and tastes slightly sweet and clean rather than brisk. The cornflower brings blue to the dry leaf more than flavour to the cup.
Brewing it
White tea wants water that is hot but off the boil; boiling water scalds the leaf and the delicacy goes with it. Use about 2 to 3 g per cup in a strainer, an infuser or a pot, and give it two to three minutes for a light, sweet cup, a minute longer for more body. The leaf is worth a second steep — pour again and the same measure gives you a lighter cup. At that dose a 100 g pack runs to roughly forty cups.
