Orange and almond on a white tea base

The base here is white tea with green tea blended through it, which keeps the cup pale and soft-edged. What sits on top is orange: orange peel and orange blossom, with natural orange flavouring behind them. Cinnamon adds warmth, lemongrass a citrus snap, rose petals a floral note, and almond finishes it with something gently nutty. Zesty at the front, refined rather than perfumed at the end.

Brewed hot

Use fresh, filtered water at around 80°C, since white and green leaf do not want a rolling boil, and steep for two to three minutes in a strainer or a pot with a filter. Two grams is about right for a cup. Because this is loose tea rather than a fixed portion, you can take the cup lighter or stronger without changing anything else.

Brewed cold

The orange comes into its own iced. Steep the same leaf far longer, six to eight minutes, let it cool, then pour it over ice with a slice of orange. The long steep makes up for what the ice dilutes, and you end up with something a good deal more interesting than a bought iced tea.
