Warm Winter is a black tea built around the spices you would expect to meet in a chai, with rose petals and almond through the leaf and vanilla rounding the edges. The cup comes out smooth and full rather than sharp, with the spice sitting alongside the tea instead of on top of it. It was blended for the dark end of the year and it behaves like it.

Almonds and caffeine

There are almonds in the blend, so it is not one to pour for a table without asking who avoids nuts. It is a black tea as well, which means caffeine; if that rules it out late in the evening, a herbal tea is the better thing to reach for at that hour.

Brewing

One teaspoon of loose tea per cup, water at 95 to 100°C, three to five minutes. The cloves and cardamom need that heat to come through; cooler water leaves the cup flat. Lift the leaf out and it is ready.
