What is in this herbal tea
Calming is a loose herbal tea from Café du Jour: peach pieces, turmeric, nettle, birch leaves and safflower. The turmeric sets the tone, earthy and warm with a faint pepperiness, and it turns the brew a deep golden yellow. The peach pieces do the sweetening and stop the blend tasting purely of the herb garden. Nettle adds a green, hay-like note closer to a mild green tea than to a fruit infusion, birch leaves are soft and near-neutral, and the safflower petals are mostly there for the look: orange-red flecks through the dried leaf.
None of that is tea leaf, so there is no caffeine in the cup. It is an infusion of herbs, fruit and petals, which also means it will not turn bitter on you the way black or green tea does when it is left too long.
Brewing
Root and herb blends like this want a full boil and a long steep, longer than a green or white tea would take. A heaped teaspoon per cup, water straight off the boil, and seven to ten minutes in an infuser, a strainer or a teapot; turmeric in particular needs the time to give up its colour and its flavour. Being loose tea, you decide how much goes in the pot. It is good hot, and the colour makes it a striking iced tea over plenty of ice.
