Six herbs, one bright cup

Fresh Herbs is a loose-leaf tea blended by Café du Jour from six ingredients, each pulling the cup in a slightly different direction:

• Nettle — grassy and green, the backbone of the blend
• Liquorice — a natural sweetness, so no sugar needed
• Fennel — mild, faintly anise-like warmth
• Elderflower — a light floral lift
• Peppermint — clean and cooling
• Lemongrass — a bright citrus edge on the finish

Together they land somewhere between a mint tea and a garden-herb infusion: fresh and lively, but rounded rather than sharp. There are no tea leaves in the blend, so there is no caffeine in it either and a pot last thing at night is no trouble.

Brewing it

Use roughly 2 to 3 g per cup — a heaped teaspoon — in a strainer, an infuser basket or a pot with a built-in filter. Pour on water straight off the boil and leave it five to seven minutes; the fennel and liquorice need that long to come through, and the blend does not turn harsh if you forget it. At that dose a 100 g pack gives you around forty cups. Brewed strong and left to cool it also makes a good iced infusion, and a slice of fresh ginger in the pot adds a bit of heat on a cold evening.
