Chemex FP-2: 100 unfolded filter squares

These are the flat, unfolded version of the Chemex bonded filter, cut for the three-cup brewers and supplied 100 to a pack. Rather than arriving pre-shaped, each one comes as a square: fold it into quarters, open it out into a cone and seat it in the brewer with the three-layer side against the pouring spout. That thicker side sits over the spout and keeps the air channel clear so the brew can drain.

What the bonded paper does

Chemex bonded paper is 20 to 30 per cent thicker than an ordinary cone filter, and that is the point of it. The denser bed slows the drawdown and holds back the fine particles and most of the oils, which is why a Chemex brew comes through as clear as it does, with none of the sediment a thinner paper lets past. The paper is cleaned with oxygen instead of bleach, so there is no chemical residue and no papery taste to rinse away first. It is made in the United States from US materials, and it is compostable, so the spent filter and the grounds go out together.

Which brewers it fits

The FP-2 is sized for the three-cup Chemex: the Classic Series (CM-1C), the Handblown Series (CM-1), the Glass Handle Series (CM-1GH) and the Funnex (CM-FNX).
