The FP-2N is the unbleached Chemex bonded filter for the three-cup brewers, 100 to a pack. Each one arrives as a flat square that you fold into a cone yourself. The paper keeps its natural brown colour and is 20 to 30 per cent thicker than a standard cone filter, which is what gives a Chemex its clear cup. It fits the CM-1C, CM-1, CM-1GH and the Funnex.

Unbleached Chemex filters, 100 unfolded squares

The FP-2N is the natural, unbleached version of the Chemex bonded filter, cut for the three-cup brewers and supplied 100 to a pack. It comes flat rather than pre-shaped: fold the square into quarters, open it out into a cone and seat it in the brewer with the three-layer side against the pouring spout, so the air channel stays clear and the brew can drain.

What the paper does

Chemex bonded paper is 20 to 30 per cent thicker than an ordinary cone filter, and the density is the point of it. The deeper bed slows the drawdown and holds back the fines and most of the coffee oils, which is why a Chemex brew comes through clean and free of sediment. Because this version is unbleached, the paper is brown rather than white; rinse it through with hot water before you brew and any papery note goes out with the rinse water.

Which brewers it fits

The FP-2N is sized for the three-cup Chemex: the Classic Series (CM-1C), the Handblown Series (CM-1), the Glass Handle Series (CM-1GH) and the Funnex (CM-FNX). Cut as a square rather than a fixed cone, it will also line most other conical filter holders, and it holds loose tea as readily as coffee.
