White candy sticks are lengths of white crystallised sugar on a stick, made for sweetening hot drinks at the table. At about 17 cm, each stick reaches the bottom of a cup or a tall glass, so it doubles as the stirrer: put it in, stir, and take it out once the drink is sweet enough. No teaspoon, and nothing left on the saucer. Café du Jour has them made in the Netherlands and sells them per piece, with a minimum order of 5.
Why crystallised sugar
Candy sugar is grown as large crystals, so it dissolves more slowly than granulated sugar and the sweetness builds while you stir rather than arriving all at once. The white version keeps that sweetness plain — which is what you want with a delicate green or white tea that a brown candy sugar would push towards caramel.
Where they suit
Sugar sticks are a tidy way to put sweetener on the table instead of a bowl and a spoon: one stick per cup, and it leaves with the cup. They work for afternoon tea next to a Royal T-Stick high tea selection, and for café service where every drink goes out with its own stick.
