Green tea with matcha and strawberry

This one from Tea of Life takes a green tea base, adds matcha and lifts it with strawberry. Matcha is green tea leaf that has been shaded on the bush before picking and then stone-ground to a fine powder, so it is not steeped and strained the way a whole leaf is, it is suspended in the water. In a tea bag that shows up as a deeper green cup with more body behind it than plain green tea, and a rounder, less grassy finish. The strawberry sits over the top as a soft fruit note, not a sweet one.

Brewing it

Keep the water off the boil. Let the kettle stand a minute, pour at roughly 80°C and give the bag two to three minutes. Green tea and matcha both turn bitter in boiling water, and so does a bag left sitting in the cup while you drink, so lift it out when the time is up. Drink it as it is; it takes milk poorly.

Organic and Fairtrade

Both marks are third-party certifications rather than in-house claims. Organic means the crop was grown under EU organic rules, without synthetic pesticides or fertilisers, and NL-BIO-01 is the code of the control body that inspects it. Fairtrade sets a minimum price for the growers and adds a premium on top, paid to their producer organisation.
