How the V60 works

The Hario V60 dripper is a cone with a 60° angle — hence the name — and one large hole at the bottom. Spiral ribs run up the inside wall, holding the paper filter away from the cone so air can escape and water can draw down through the whole bed instead of stalling against the side. Because the outlet is a single wide hole rather than several small ones, the dripper does not fix the flow rate for you: your grind size and your pouring speed do. That is the point of a V60, and it is why two people can get two different cups from the same beans.

Brewing with size 01

Size 01 is made for one to two cups. Sit it on a mug or on a V60 server, drop in a size 01 filter paper, rinse it through with hot water to wash out the paper taste and warm the cone, then tip that water away.

1. Grind about 15 g of coffee medium-fine
2. Heat water to 90-96 °C
3. Pour roughly 30 ml over the grounds and wait 30 seconds for the bloom
4. Add the rest slowly, in circles, over two to three minutes
5. Lift the dripper off once it has drained

Aim for a total of two and a half to three and a half minutes. Too sour means grind finer; too bitter means grind coarser. A gooseneck kettle makes the pour easier to control, and a coffee scale keeps the coffee-to-water ratio the same from one morning to the next.
