Hario V60 filters, size 01

These are Hario's own V60 papers in size 01, the small cone, in a pack of 100. Size 01 is cut for one to two cups, which makes it the paper for the V60 01 dripper and for most other one- and two-cup cones. Each filter is shaped and creased to sit flat against the spiral ribs of a V60 rather than bunching up in the tip, which is where a badly fitting paper chokes the brew.

The paper does two jobs in a pour-over. It holds back the fine grounds, so nothing gritty reaches the cup, and it absorbs most of the coffee oils. That is what gives filter coffee its clear, light body and clean finish next to the same coffee out of a cafetière. The trade-off is that the paper must add nothing of its own, and these leave no papery taste behind in the brew.

Using them

Fold the crimped seam over and drop the cone into the dripper. Rinse it through with hot water before the coffee goes in: that pulls the paper against the ribs and warms the dripper and the pot underneath. Tip the rinse water away, add the ground coffee and brew. One filter per brew, and nothing to wash afterwards but the dripper itself.
