Virunga is a 70% dark chocolate made by Original Beans from organic cocoa grown in Virunga National Park, in the eastern Democratic Republic of Congo. The bar was sold for years as Cru Virunga; the chocolate is the same, the name has simply been shortened.

How it tastes

Warm and rounded, with sour cherry and black tea running through it. At 70% cocoa there is still enough sugar to keep the bar from turning austere, but the cocoa leads and the finish is long. The chocolate is conched for 20 hours — an unhurried turn in the machine that grinds the particles down fine and takes the rough edge off the acidity, which is where the smooth texture comes from.
