Silencieuse is a white tea with rose, and there is nothing else in it. White tea is the least handled of all the tea styles: the young leaf is withered and dried, never rolled or fired, so the cup stays pale and tastes gently sweet instead of brisk. The rose sits lightly on top of that — a floral note in the aroma more than a flavour that takes the cup over.

Brewing it

Use about 2 g of leaf per cup, water at around 80°C, and two to three minutes. Let boiled water stand for a minute before you pour: water straight off the boil scalds a white leaf and flattens the sweetness that you bought it for. Give the leaf room as well. This is an airy leaf that needs to unfold, so a roomy strainer, filter or teapot with a built-in filter does a better job than a tight little ball. At 2 g a cup, the 100 g pack runs to roughly 50 cups.
