Blossom Sea - Black tea 100 g - Café du Jour loose tea

Black tea with the blossoms left in
Blossom Sea is a blend rather than a plain black tea. Alongside the leaf sit safflower petals, cornflower petals and sunflower petals, which fleck the dry blend with orange, blue and yellow. What they mainly add is the look: the floral, slightly exotic aroma that gives this tea its name comes from the flavouring blended through the leaf, while the blossoms complement it with a softer floral note over a smooth black tea.
Drink it as it comes
The flavour is mild and floral, so it is worth taking the first cup without milk or sugar. Both will cover the blossom notes the blend is built around. Add them afterwards if that is how you drink your black tea; nothing in the blend argues against it.
In the pot
Use about 2 g of leaf per cup and water at roughly 95 °C, just off the boil. Three to four minutes draws the floral side out; much longer and the tannin in the black tea starts to push it aside. A teapot works better here than a narrow infuser, because the petals and the leaf both want room to move. As loose tea you set the dose yourself, so a lighter or fuller cup is a matter of a spoon more or less.
