Banana and strawberry over green tea

Café Terrace at Night is a flavoured green tea carrying fruit you rarely meet in a tea caddy: banana pieces and strawberry pieces, with marigold blossom mixed through for colour. Brewed, the fruit is the first thing you notice, banana soft and rounded with the strawberry brighter behind it, while the green tea underneath keeps the cup fresh instead of syrupy. The name is an ode to Van Gogh's terrace scene at Place du Forum in Arles.

Water at 80 °C, not boiling

Green tea is the one thing you should not pour straight off the boil: around 80 °C is where it stays sweet instead of turning bitter and drying. Brew it in a strainer, a filter or a teapot so the leaf and the fruit pieces have room to open. It is loose tea, so dosing is up to you — a heaped spoon for a fuller cup, a level one for something lighter.

Iced, later on

For iced tea, let it steep a little longer than usual, leave it to cool, then serve it over ice with fresh fruit in the glass. The banana and strawberry come into their own cold, which is where a fruited green tea has the edge over a plain one.
