Camomile from Tea of Life
Camomile is a herbal infusion made from the dried flower heads rather than from tea leaf, and this one from Tea of Life comes in 25 individually wrapped bags. In the cup it is pale gold and softly floral, with the light honeyed sweetness the flowers are known for and no bitterness behind it. Because there is no tea leaf involved, it is naturally caffeine-free, so the hour of the day makes no difference to when you drink it.
Brewing it
Use freshly boiled water and give the bag four to five minutes. Camomile is forgiving: leave it longer and it deepens rather than turning sharp, which is not true of black or green tea. Cover the cup while it steeps if you want to hold on to more of the aroma. It needs nothing added, though a little honey suits it if you like your infusion sweeter.
