Rooibos Lemon Cheesecake is a flavoured rooibos tea from the Café du Jour loose range. The base is plain rooibos, sweet and round with a faintly woody edge; lemongrass lifts it with a clean citrus note, and calendula petals go in for colour more than for taste. Together it reads creamy-sweet with a fresh lemon finish - the flavour of the cheesecake rather than the weight of it.

Brewing it

Treat it like any other loose tea: a spoonful in an infuser or a pot, water straight off the boil, and as long a steep as you fancy. Rooibos holds almost no tannin, so it will not turn bitter if the leaf stays in while you drink. Because you measure it out yourself you can make it as light or as strong as suits you. It is good cold as well - brew it a shade stronger, let it cool and pour it over ice, where the lemon comes forward.
