Costa Rican coffee from Tarrazú
These are Café du Jour's Costa Rica beans: 100% Arabica from Tarrazú, one of the country's mountain growing regions. Costa Rican coffee grows on fertile volcanic soil and on slopes that are sheltered from the worst of the weather, and on those slopes the cherries ripen slowly. Slow ripening is what puts sweetness and clarity into a bean, and both are in this cup.
In the cup
Full and layered, with a refined aroma rather than a loud one. The sweetness reads as ripe red fruit and plum, and a soft chocolate note in the finish keeps it from being purely fruity. At 8 out of 13 on our scale it sits just above the middle: present enough to hold up as an espresso, never heavy. That balance is what makes it a coffee you come back to rather than one you admire once.
Brewing it
A versatile bean that does not insist on one method. As an espresso the fruit sweetness concentrates and the chocolate carries into the aftertaste; through a filter the aroma opens out and the body stays with it. The beans are sold whole, so a grinder or a bean-to-cup machine is the starting point.
