These are original Chemex FSU-100 filters, bonded and folded into the square shape that opens out into a cone inside the brewer. The paper is 20 to 30 per cent thicker than a standard filter, and that is the point of it: it slows the water down and holds back more of the fine grounds and the coffee oils, which is where the clear body and smooth finish of Chemex coffee comes from. The paper is unbleached, so it is natural brown rather than white, and it is neutral in the cup — no papery edge over the coffee.

Which brewers it fits

FSU-100 is the size for the 6-cup and 8-cup Chemex brewers with the wooden collar, the CM-6C and CM-8C among them. It is too big for the smaller Chemex models. With some adjusting it will also sit in filter coffee makers from other brands, though it is cut for the Chemex first.

Using them

They arrive pre-folded, so there is nothing to fold: take one from the box, open it out into the cone, rinse it through with hot water if that is your habit, and brew as usual. Afterwards the paper and the grounds lift out in one piece.
