JoeFrex presses this pitcher from thick 18/8 stainless steel — the food-grade alloy with 18 per cent chromium and 8 per cent nickel that cutlery and commercial kitchen equipment are made from. It does not rust and it does not take on flavours from one drink to the next. The heavier gauge is what you feel first: a solid jug stays where you put it against the steam wand instead of shifting, and steel thin enough to flex makes a mess of the swirl at the end. Steel also passes the temperature of the milk straight through to your hand, which is how most people judge when to stop steaming.

Choosing a size

Size matters more than it looks. Fill a jug past the base of the spout and the milk has nowhere to expand to as it takes in air; fill it too lightly and the tip of the wand cannot stay under the surface. Match the jug to the number of drinks you actually make, start with cold milk, and leave room above it.
