Star anise herbal tea, without the mint

Star mix is a traditional herbal infusion built on star anise and liquorice, and this version leaves the mint out. Five botanicals go into it and nothing else. The cup comes out sweet and warming, naturally free of caffeine and low in tannin.

The five botanicals

• Star anise – the signature flavour of the blend
• Aniseed – reinforces the anise character
• Liquorice – thick-cut pieces that give a deep, earthy sweetness
• Fennel – a mild, slightly sweet background note
• Juniper berries – a subtle, resinous edge that rounds off the cup

Brewing it

Use a tea strainer, an infuser basket or a teapot with a built-in filter. Around 2 to 3 grams per cup, freshly boiled water, then steep to taste: a longer steep simply deepens the anise and the liquorice. If you want mint in the cup, that is a different blend; this one is anise and liquorice from start to finish.
