Getting it right

Green tea is the one tea that does not want water straight off the boil. Let the kettle stand for a minute or two before you pour, then give the bag two to three minutes and take it out. Boiling water and a long steep pull bitterness out of green leaf, and a lemon note is too light to hide behind.

When it suits

Green tea comes from the tea plant, so there is caffeine in it — most people keep this one for the daytime. The lemon makes it an easy cup mid-morning or after lunch, when something sweeter or milkier would be too much.
